Cato Country Farm is a featured farmer in Connecticut Farmer & Feast, a revolutionary new cookbook by Emily Brooks.
Cato Niche Farm is a small relatives farm in Colchester, Connecticut, where the mother-son team of Elizabeth and Dot raises 40 free-range Jersey kine without the splurge of hormones or subtherapeutic antibiotics.
From our cows’ raw milk, we paw make a dozen styles of aged farmhouse cheese travel from mild and milky to runny and pungent to stabbing and firm.
Cato Niche Farm, LLC, is a mother-son partnership. Elizabeth MacAlister has owned the farm all for more than 30 years. She began milking cows and making cheese in 1997 as a way to keep her grow sustainable.
To get started, she took a precise course in cheese devising at California Polytechnic University and a workshop with a Belgian cheese master, and past she began experimenting.
Her son Blotch Gillman left his opening arsenic a 7th grade English teacher to link her in 1999. Grade learned from Elizabeth too element from several additional workshops (and more experimentation!).
Nowadays, Mark makes most of the cheese and oversees its aging, while Elizabeth manages the plough operations including milking and kind all for the cows. The time out of the Cato Corner family includes various full time and part time workers and a pair of diligent and attentive border collies titled Flute and Harp.
Recognition & Awards
Dairyere won 3rd Place in its genus at the prestigious American Cheese Society Awards, 2010.
Our Black Ledge Blue, Bridgid’s Abbey, and Bloomsday took all iii prizes within the CT Specialty Food Awards Dairy Category, 2010.
The farm was selected As the champion of the Gallo Relatives Vineyards “Never Thwart Growing Award”
for Outstanding Family-Owned Artisanal Feed Production, Apr 2006
